Kimera Coconut Chia Pudding by Arnella Kajtezoviac (@Arnellak)

Ingredients:

Layer 1

  • ¼ heaping cup chia seeds

  • 1 cup almond milk
  • 2 tablespoons maple syrup
  • 1/2 cup coconut milk
  • pinch of sea salt
  • 4 tablespoons coconut sugar

Layer 2               

  • ¼ heaping cup chia seeds
  • 1/2 cup almond milk
  • 2 tablespoons coconut milk
  • pinch of sea salt
  • 4 tablespoons coconut sugar

1 cup Kimera Koffee 

Toppings (optional):

  • peanut butter
  • nuts
  • bananas
  • dark chocolate chips
  • maple syrup
  • coconut sugar
  • granola

Instructions

  1. Brew a cup of Kimera Koffee and set aside
  2. In a large jar or bowl, stir together the all the ingredients in layer 1 (chia seeds, almond milk, maple syrup, coconut sugar, coconut milk, salt)
  3. In another large jar or bowl, stir together all the ingredients in layer 2 (chia seeds, almond milk, coconut sugar, coconut milk, salt and the cup of coffee)
  4. Chill covered for 30 minutes, stirring occasionally. Chill overnight, until the chia seeds are plump and the pudding is thick. If it gets too thick, stir in a little almond milk to reach your desired consistency.
  5. Scoop chia pudding into bowls or cups, separating the two layers and top with bananas, nuts, peanut butter, chocolate, coconut sugar, maple syrup, it’s up to you.
